Widely considered one of the finest sushi restaurants on earth, Saito-san's intimate counter seats only a handful of guests at a time, serving an omakase of impeccably sourced Edomae sushi. The rice seasoning and fish aging are benchmarks the industry measures itself against. The caveat is severe: reservations require a Japanese-speaking introducer and are essentially impossible for walk-ins — plan many months ahead through a hotel concierge.
