Canada's only dedicated ceramics museum sits directly across from the ROM and offers a surprisingly rich collection of European porcelain, pre-Columbian pottery, and contemporary ceramic art. The rotating contemporary shows are consistently excellent and often feature Canadian artists pushing the medium in unexpected directions. Clay Studio workshops let you make something yourself. Caveat: the permanent collection can feel modest in scale, so check what temporary show is on before visiting.
