Taberna La Bola

A Madrid institution since 1870 serving the city's most celebrated cocido madrileño — the hearty chickpea, meat, and vegetable stew that is the soul of local winter cooking. The family-run taberna has barely changed in a century, with tiled walls, wooden beams, and a coal-fired kitchen. The cocido is served only at lunch and only on weekdays, so plan accordingly. Tourists come, but so do generations of madrileños.
