Knife is chef John Tesar's steakhouse obsession — a Dallas-born concept that ages its own beef in-house and sources from small American ranches. The dry-aged ribeye and the 240-day aged cuts are extraordinary, and the sides (especially the bone marrow butter) are not to be skipped. It's expensive, but for serious steak lovers it's one of the best in the country.
